Poppyseed Chicken Casserole: A Favorite Family Meal
Well the people have spoken! Some of you have been dying to get your hands on this Poppyseed Chicken Casserole recipe, and I have no doubt as to why. This favorite family meal appeases even the most picky eaters, and it’s simple chicken recipe makes it a quick dinner idea for those busy days. And as if this favorite family meal could get any better? This simple recipe has become my top freezer meal for pregnancies, postpartum and busy school days.
Now I wont keep the anticipation any longer! I bet your mouth is already drooling just thinking about this quick dinner idea! And so ladies and gentlemen ( because yes, even some of the men were asking for this!) my take on Poppyseed Chicken Casserole.
Poppyseed Chicken Casserole
A Simple Chicken Recipe + A Top Freezer Meal
Servings: 6 || Calories: 438 || Protein: 37.7 g || Carbs: 35.6 g || Fat: 18.6 g
- 4 Chicken Breasts (24 Ounces)
- 2 cans of Low Fat Cream of Chicken Soup
- 1 Cup 0% Plain Greek Yogurt
- 2 Celery Stalks (1 Cup chopped)
- 1/2 Cup of Chopped Onion
- 1 tsp Salt + Pepper
- 1 Cup of Dried Quinoa
- 4 1/2 TB of Salted Butter
- 20 Ritz Crackers (I like to use whole grain)
- 1 TB Poppyseeds
Cook chicken breasts in oven at 350F for 30 min.
note: sometimes I’ll put them right from the freezer and cook at 400 for 40 min.
Cook Quinoa as stated on the bag’s instructions. Typically its a 1:1 ratio of quinoa to water. Place quinoa and water in pot. Bring to a boil, then reduce to a simmer. Cover for 10 minutes. Fluff with a fork. Set Aside.

Chop then saute Onions and Celery in a little oil or Pam cooking spray. Flavor with a pinch of salt and pepper.
Mix together Cream of Chicken Soup, Greek Yogurt, Onion and Celery mixture, and 1 tsp of salt and pepper. Set Aside.
Chop cooked chicken into 1 in cubes. Add to casserole mixture.
In a separate bowl melt butter. Pulverize Ritz crackers in food processor or place in zip lock baggy and smash with hands. Mix together melted butter, smashed ritz crackers and 1 TB poppyseeds.
Layer cooked quinoa on bottom of baking dish. Next, layer casserole mixture. Finally, top with Ritz cracker mixture. Place in oven at 350 for 25 minutes or until bubbly.
